The ripeness and precise age categorization indications of a banana fruit depends on the pigment content, starch index and sugar content. However, according to color stages of banana, bananas are now traded, and purpose of this study is to look at an instrumental method for determining fruit maturity and quality that is quick and non-destructive. One of the banana categories taken of Musa Cavendishii (These bananas are usually sold when they still have a slight green tint) was cultivated in Honduras has been used in this work. Here, chosen at seven various color levels after ripening in a professional ripening chamber. The use of visible light spectroscopy (VIS) and near-infrared spectroscopy (NIRS) in reflectance mode was examined. Fruit chlorophyll and sugar content can be calculated without demolishing the fruit. Partial Least Squares (PLS) Auto-scaled spectral data were subjected to regression. Reference analyses were conducted with the help of spectrophotometry following chlorophyll extraction with diethyl ether and high-performance liquid Individual sugar analysis using chromatography. Finally, this thesis demonstrates the possibility of VIS/NIRS for non-destructively predicting banana fruit maturity and quality depends on the chlorophyll and sugar content of the fruit.
