In the industrial environment of the European Union, the industrial sector of cheese production with superior quality protection has a significant place. Solutions with a focus on technical advancements that boost automation and quality control in the manufacturing process should be used to improve the sector's competitiveness. Furthermore, European food rules provide that "food traceability must be assured at all phases of production, transformation, and distribution." Because surrounding circumstances like as humidity, temperature, product handling (turning), and mold growth prevent unique product labeling, the industry currently lacks a technique that comprehensively assures accurate traceability throughout the cheese ripening process. It was for this reason that cheese manufacturing and quality control were established. Is for this that the production and quality control of cheese delivered by batches and the data storage is doing manually by the company personnel. This paper deals with the possibility of conducting an individual and by batches quality control of the product in cheese industries. By means of RFID tags complete traceability is performed improving the cheese fabrication process monitoring and production control. This study helps to understand the difference between cheese types and allows determining the main parameters to follow during cheese maturation for the design of the sensor tag. The second step was the design of identification tags for the traceability of food products during the manufacturing process.
