While literature discusses sustainability certifications in the Horeca sector across Popularity, Green reputation, and Economic performance, existing empirical studies are based on customer intention rather than actual behaviour, calling for additional quantitative analysis. To address this gap, this study provides a short-term impacts analysis on a sample of 128 European Restaurants awarded with the green Michelin star between 2020 and 2024, investigating how the certification affects the three macro areas, and the existence of cross-area relationships. Seven variables were extracted from Google Maps, Google Trends, Orbis, and APIs, distributed across the three macro-areas. The analysis adopts two analytical logics: Panel Fixed Effects and Random Effects regression models, and descriptive time-variation analysis. Results identify a significant relationship of certification with Customer attention and Total production, as well as a significant relationship between Online content and Total production. All analyses fail to find a significant relationship with Green Reputation variables. Literature suggests two main interpretations of this result: first, these awarded restaurants already enjoy exceptionally high prestige, leaving little room for further reputational gains, and second, consumers in the fine-dining sector assign a relatively lower emphasis to sustainability compared to the gastronomic experience itself. Lastly, the analysis reveals that customer-driven variables are more responsive and methodologically effective in capturing sustainability-related effects than business-driven metrics, which suffer from excessive statistical noise caused by external confounding factors, to which SMEs are particularly susceptible, risking obscuring empirical findings.
Sebbene la letteratura esamini le certificazioni di sostenibilità nel settore Horeca in termini di popolarità, reputazione e performance economica, gli studi empirici esistenti si basano sulle intenzioni dei clienti piuttosto che sul loro comportamento effettivo, rendendo necessaria un'ulteriore analisi quantitativa. Per colmare questa lacuna, il presente studio fornisce un'analisi degli impatti a breve termine su un campione di 128 ristoranti europei insigniti della stella verde Michelin tra il 2020 e il 2024, indagando in che modo la certificazione influisca sulle tre macroaree e l'esistenza di relazioni trasversali. Sono state estratte sette variabili da Google Maps, Google Trends, Orbis e APIs, distribuite tra le tre macroaree. L'analisi adotta due logiche analitiche: modelli di regressione a effetti fissi e a effetti casuali su panel, e analisi descrittiva delle variazioni temporali. I risultati identificano una relazione significativa della certificazione con l'attenzione dei clienti e la produzione totale, nonché una relazione significativa tra il numero di contenuti online e la produzione totale. Nessuna tra le analisi riesce a trovare una relazione significativa con le variabili della reputazione ecologica. La letteratura suggerisce due interpretazioni principali di questo risultato: in primo luogo, i ristoranti premiati godono già di un prestigio eccezionalmente elevato, lasciando poco spazio ad ulteriori guadagni in termini di reputazione; inoltre, i consumatori nel settore della ristorazione di alto livello attribuiscono un'importanza relativamente minore alla sostenibilità rispetto all'esperienza gastronomica stessa. Infine, l'analisi evidenzia che le variabili orientate al cliente sono più reattive e metodologicamente efficaci nel cogliere gli effetti legati alla sostenibilità rispetto agli indicatori orientati al business, che risentono di un eccessivo rumore statistico causato da fattori di disturbo esterni, ai quali le PMI sono particolarmente esposte, con il rischio di oscurare i risultati empirici.
