This thesis focuses on the development of a screen-printed electrochemical sensor modified with an electropolymerized molecularly imprinted polymer (e-MIP) for the determination of ascorbic acid in fruit juices. The sensor was prepared by electropolymerization of pyrrole in the presence of ascorbic acid as the template molecule, with the aim of obtaining selective recognition sites for the analyte. The system was characterized using electrochemical techniques, and the quantitative determination of ascorbic acid was performed by differential pulse voltammetry (DPV). The sensor performance was evaluated through selectivity studies and the analysis of simulated and fortified fruit juice matrices, obtaining recovery values ranging from 81% to 114%. Finally, the results obtained with the e-MIP sensor were compared with those from iodometric titration using statistical tests, showing good agreement between the two methods. Overall, the results demonstrate the potential of the e-MIP sensor as a simple, rapid and selective approach for the determination of ascorbic acid in complex food matrices.
